180 DAY RAW SCHOOL LUNCH CHALLENGE


VEGETABLE STIR FRY WITH FLAX CRACKERS, APPLE, BANANA & FRESH LEMONADE
While homeschooling, my daughter Daisy would make her lunch as if she was going to school and actually put it on a tray. One reason I love homeschooling is the creativity it births in my children. They know how to have fun and enjoy the little things that life has to offer and they refuse to miss out. So, if she is home schooled but wants to feel like she is in school she will be creative during lunch time and she is happy!

Here are some specifics about my childrens diet. They have been eating raw for 3 years, the last year and a half 98% raw when away from home with a very limited cooked vegan food section, no soy or dairy, 100% raw when at home. We always start our day with water (kids at least 8-16 oz.) and Green Drink, they each drink 28 ounces or more. Some mornings for breakfast I will make raw oatmeal or creamy oat groats. My son is 13, 5' 8" and 116 lbs. My daughter is 12, 5' 1" and 111 lbs. They have not been immunized since ages 5 & 6, and will never be again. They do not get sick, maybe a sniffle for 3 days, usually after being around other children who may be ill. They are a little nervous about what others may say about the way they eat, but so far so good. This is a 180 raw lunch challenge. I want to prove that even with a hectic schedule and lifestyle you still have time to make sure your children eat 100% healthy, 100% of the time! If I can do it, you can too!

SWEET CURRY KALE & CREAMY CORN WITH CELERY ROOT RICE
Sept. 7, 2010: First day of school for my raw children. I was not stressed at all about what they would take for lunch, leftovers of course. Our Labor Day dinner consisted of Celery Root Rice, Sweet Curry Kale and Creamy Corn with "Celery Root" Rice. The kids served their lunch portions first and we enjoyed the rest for dinner. They also took an orange and a bottle of water.

APPLE TREAT & GREEN DRINK
Sept. 8, 2010: My kids are supper happy today. One of their favorite meals is Apple Treat. They had 2 containers like the one you see in the picture and the Green Drink was for breakfast. My son selected the granola, I usually make my own, unfortunately this one has rice puffs in it. The Granola was a Hemp Seed Granola bought at Whole Foods in the bulk section. When in a crunch use it. The kids also took an orange and to save time during lunch they peeled their orange first and then put it in a plastic bag. My son received a compliment today. His friend said his lunch looked good. I will be sending them to school with glass containers just need to get smaller ones, and figure out a way to prevent breakage.

GARDEN PATE ON A BED OF SPINACH LEAVES
Sept. 9, 2010: Today is the 3rd day of school. My son had homework and we were up until almost midnight working on it. The joys of deadlines. So, needless to say, nothing was prepared for today, except grapes washed and bagged. I also soaked some Oat Groats last night so the kids could have Oat Groats this morning for breakfast also. I was in the kitchen by 7 a.m. and made this delicious Pate, Green Drink, Smoothie and the Creamy Oat Groats. So, for the third day of school, the kids will have Pate on Spinach, Grapes and a Lara Bar. The kids had 2 special treats for lunch today, a Lara Bar and a delicious Orange Julius Smoothie, no picture unfortunately, but so delicious. Apple Treat & Green Drink
September 10, 2010: The kids took Apple Treat again, just an apple and banana chopped and sliced with some oats sprinkled on top. They also took a Lara Bar and some fruit. Apple Treat is one easy Lunch that they will enjoy often.

BBQ CHICKUN NUGGETS
September 13, 2010: In celebration of their Dad's Birthday the kids took another favorite, BBQ "Chickun" Nuggets. These tasty bites are made from sprouted lentils, carrots, curry, and onion. There delicious! My children also enjoy the honey mustard dipping sauce that I make. The kids also take a Lara Bar as well and a smoothie. The had water and green drink for breakfast.

September 15, 2010: A delicious salad, my son only drank his smoothie at school and ate his salad when he returned home. My daughter ate hers at school, she said it was great. My son enjoyed his as well. I also sent them with Italian Bread sticks made from flax seeds and italian seasonings.

September 16, 2010: Sorry no picture, I was working a Vitamix Show, so my husband made the kids a salad and a smoothie.

September 17, 2010: The nut meat is very filling and my children know to drink their fruit smoothie first. As the weeks progress it seems the kids don't want much for lunch, they would much rather have fruit and a smoothie.

THIRD WEEK OF SCHOOL 171 DAYS LEFT

In case you are wondering if the kids are happy with their lunches, buying regular food or if they eat it all. Well, yes, no and sometimes. They are fine with their lunches, they have not purchased any regular cafeteria food and they sometimes bring home parts of their lunch but are quick to finish it after school on their way home. I will usually prepare a smoothie for them to enjoy as soon as they get out of school. We have diner between 3 p.m. and 5 p.m. To prepare for this week I have flax crackers and BBQ Chicken Nuggets in the dehydrator. I'm making the chicken nuggets because I had the sprouted lentils already so I needed to use them. I've been also craving salsa and chips for a week. The kids have actually put in a request for Kale Salad, nut meets and just lots of fruit for lunch, my son says it gives him quick energy. Stay tuned for more......

BBQ Chickun Nuggets with Honey Mustard Sauce
September 20-21, 2010: I made this again because I had the lentils sprouted already. This is a delicious recipe and they taste amazingly delicious. My kids gobble them up so I always make an extra batch. They also took a smoothie and fruit. I usually don't let them over eat on dehydrated food, but due to my work schedule they had the nuggets two days in a row.

Fruit Salad
September 22-23, 2010: The kids took a fruit salad and they did not get a picture so I'm using this pretty picture of fruit. My daughter Daisy (nickname), took a fruit salad two days in a row actually. My son Diesel took a cabbage salad and he forgot the picture as well. This was actually a fruit platter I made for Fridays breakfast. Grapes, orange, pineapple and apples were added later. My son says, "Mom, this is just what I needed." They had their green drink and water as well.

Raw Spaghetti with a Gooey Lemon Torte
September 24, 2010: My kids despise zucchini! But when I make a delicious raw spaghetti sauce they absolutely love the sauce and will eat the raw zucchini. I can get your kids to eat their vegetables as well. :) www.ihavedivinehealth.com I added some olives on top. The Lemon Torte is a simple dessert and my son loves it so much instead of taking it to school he leaves it in the refrigerator to enjoy it after school. He is a young man of patience and will power.

This ends the third week of school, it was a hectic week. If I don't have pictures up the exact same day, bare with me. I am committed to completing this 180 day challenge! I prefer homeschooling, my daughter is ready to come home, my son is sticking to his plan to stay in school. I'm praying for God's guidance, grace, patience and mercy. My son was late two days, my daughter received her first tardy. My husband and I need to disciplinary action. Many late nights and rushed mornings, we will get this thing together!

SUMMER TIME KALE SALAD W/ MANGO
Sept. 27, 2010, Monday: Delicious Kale salad with red bell peppers and mango. The Kale was messaged in a Lemon Olive Oil dressing. The children also took a fruit smoothie and started their day with water and green drink.

APPLE TREAT AND SMOOTHIE DAY
Sept. 28-29, 2010: What can I say, if we are too busy and were not able to plan the night before, Apple Treat it will be. My daughter said her Oatmeal was hard, so I recommend putting it on the bottom or in between the apples and bananas. Apple treat is just an apple chopped, a banana sliced and make your own granola from dried fruit, nuts, oatmeal and seeds. You can also add a little honey or maple syrup, we did not this time.

MUSCADINE GRAPES & FRUIT SALAD - Carrot Juice Recipe Included
Sept. 30, 2010: The kids took a fruit salad with peaches and strawberries. They took it so fast I did not get a picture, oh joy! They also took a baggie of sliced oranges and a baggie of these huge, concord grape tasting muscadine grapes. A carrot juice/smoothie went along as well. The kids did not care for the grapes, Daisy ate them all and saved the seeds, does she plan to plant them? Diesel ate some of his grapes but they both do not like the taste of them and the skins are very thick. Carrot Juice Recipe - 2 Carrots, 1 apple, 8 Muscadine Grapes, Thumb size piece of ginger and ice. Blend in Vitamix until smooth! Enjoy!

MEXICAN CORN SALAD & APPLE SAUCE
October 1, 2010, Friday: This corn salad is one of my childrens favorite raw dishes. I used white organic sweet corn, jalapenos, cilantro, red bell pepper and red onions. What a great way to sneak in antibacterial and antifungal agents like jalapeno and onion. My sauce is simple - lime juice, cumin, chili powder and sea salt or herbamare. Of course I made the apple sauce! No fruit cups allowed in my house. Enjoy your weekend and check back next week for more great pictures! The kids are doing well, very tired when they get home so next week I am focusing on foods that provide a slow release of sugar for more energy. My kids have lots of homework and naps are time consuming. :)

NAPPA CABBAGE SANDWICH WITH SLICED CUCUMBERS
October 4, 2010, Monday: I made hummus at 7:00 a.m. this morning. My hummus is made from sunflower seeds, pumpkin seeds, celery, scallions, tahini, lemon and sesame seeds. I chopped tomatoes, cucumbers, and avocado and mixed it in with the hummus. Adding the veggies allows you to stretch your hummus and eat more vegetables. The Nappa Cabbage is delicious and a great substitute for bread. My husband loves Nappa Cabbage salads. Make any nut pate and smash it between two Nappa leaves and your ready for the world. The kids took a fruit smoothie made by their Dad the night before. I have no idea what they are having tomorrow, stay tuned.................

October 5, 2010, Tuesday: The kids also enjoyed brownies ( by the pink lid ), and a fruit smoothie. "Who says you can not send your children to school eating 100% healthy everyday?" The brownies are made from Nuts, Dates and Raw chocolate.

October 6, 2010, Wednesday: The kids took kale salad. When lunch items are duplicated I don't put in a picture. See Sept. 7, 2010 for a picture of kale. This is one of their favorite dishes.

October 7, 2010, Thursday: My son took cabbage for lunch, my daughter took strawberries, raspberries and kiwi for lunch. They booth had a fruit smoothie. For breakfast they each drink 32 oz of Green Drink and I try to get them to drink 16 oz of water before leaving in the morning, if I remember.

October 8, 2010, Friday: Both kids took Cabbage today, fruit smoothies and water. I made lots of cabbage salad and it keeps well, so now we have to eat it. We enjoyed the last of it as an additional side with Sundays dinner.

October 12, 2010, Tuesday: Apple Treat, one of our emergency lunch items, when nothing else is prepared we turn to apple treat or a salad. The kids took a delicious fruit smoothie made by their Dad and water also. See Sept. 8, 2010 for the picture.

October 13, 2010, Wednesday: My son Diesel took water and 2 apples, he had an upset stomach and wanted to fast at 13 years old. He is so amazing! My daughter took sliced oranges, apples and water. If it sounds like my kids don't eat much, they don't. We are used to eating a largest meal around 3 p.m. Our green drink is so filling that we just aren't hungry. The kids will most often eat their lunch in the car on the way home. See Sept. 22-23 for picture of fruit.

October 14, 2010, Thursday: This has become a family favorite. My daughter Daisy took this to school. My son did not take a lunch today, he wanted to fast again. I received a call just after 10 a.m. it was my son Diesel. He said, "Mom you were right I should have brought lunch, can you bring it to me?" I said, "no, you can eat when you get home, next time listen to me". Tough love at it's finest!

Friday, October 15, 2010: We were rushing this morning. I had a health fair and I told the family to be ready by 7:50 a.m. So, Apple Treat it was, the smoothie was made the night before, just fruit with ginger root. I made green drink and we made it out the door 6 minutes after our scheduled departure, but all was good! The apples are on the bottom. This is a delicious breakfast to enjoy anytime!

Monday, October 18, 2010: This was leftovers from Sunday's delicious dinner. I made Celery Root Rice, just ground up in the food processor and some salt and pepper and you have rice! Daisy, my daughter made the marinated veggies for the marinade she used Nama Shoyu, Olive Oil and her favorite mix of seasonings, it changes each time:)

FRUIT SMOOTHIE, BANANA, TRAIL MIX & A LARABAR
FRIDAY, OCTOBER 22, 2010: It's really cold outside! Lunches don't have to be extravagant. When you eat a raw diet you take in lots of fiber which keeps you full and satisfied. My kids are used to eating their larges meal between 2 p.m. and 5 p.m. Having Green Drink in the morning and a fruit smoothie (Muscadine Purple & Green Grapes, Strawberries, Concord Grapes, Banana, Lemon, Orange, 1 carrot, 1 celery stick, 1 garlic clove, 1 thumb piece of ginger) for lunch is actually quite filling. The trail mix was just almonds (soaked 8 hours and dehydrated), raisins, sunflower seeds). The Larabar is raw just dates and nuts, however it's not organic. It's a great treat that the kids enjoy. I have to start out by saying I do feed my kids! But, this week they just weren't that hunger so lunches were very simple. I must say they ate well after school. My kids have been homeschooled so the transition into public school has been very filling emotionally. They are taking in so much information and being stimulated on so many different levels. They are exhausted when they come home and have hearty appetites.

MONDAY, OCTOBER 25, 2010: The kids took a fruit smoothie, a piece of fruit and a mini Lara Bar. Of course the kids have 32 oz of green drink every morning!

TUESDAY, OCTOBER 26, 2010: Kale Salad with a Thai Curry sauce, this is a delightful lunch. Fortunately, my son, Diesel ate his but my daughter, Daisy ate hers when she came home. A Smoothie and a mini Lara Bar went along as well.

WEDNESDAY, OCTOBER 27, 2010: This is a cashew chocolate pudding, I actually made this Tuesday night. It was delicious! For lunch the kids enjoyed a smoothie, a piece of fruit, an apple or banana and a mini Lara Bar.

FRIDAY, OCTOBER 29, 2010: My daughter Daisy said smoothie taste like a bag of Skittles. It must have been really good. The almond ginger pate is a family favorite, great way to eat lots of carrots, celery and ginger. They also enjoyed two huge Oatmeal Apple Cinnamon Cookies, a banana and Green Drink.

We had a very busy weekend last week. The kids and I modeled in a fashion at the Green Festival in DC. We have a busy weekend this weekend in NYC. The kids and I will be working with Brown, my husband at his huge event at one of New York Cities largest convention centers. We need a vacation! Make healthy food for your family and feel amazing everyday!

NOVEMBER 1, 2010: After a busy weekend, there was no time to prepare something gourmet. So, my kids took sliced pears, a trail mix made with cashews, raisins and dates. For breakfast the kids had Green Drink and they took a fruit smoothie with their lunch.

NOVEMBER 3, 2010: The kids only had 2 days of school this week, Thank God! So, we all had a wonderful much needed break. This is nappa cabbage with a sunflower seed pate made by my husband. One of his favorites, sunflower seed pate with a variety of seasonings. The fruit smoothie usually contains, strawberries, orange, apple, banana, ginger, raspberries, pineapples or pears whatever we may have laying around.

NOVEMBER 8, 2010: The chickun nuggets have so much flavor, they are made from lentils, carrots and curry powder, so they have a kick as well. I make a honey mustard sauce from organic mustard made with Apple Cider Vinegar and raw organic honey. I made a few batches so the kids took these at least three days in a row.

NOVEMBER 9, 2010: Once again, these are delicious and they really remind you of BBQ Chicken Nuggets.

NOVEMBER 10, 2010: Raw Plantains are delicious an very sweet when ripe. I added some scallions, sundried tomatoes, curry, olive oil and you have a delicious sweet spicy but refreshing dish.

NOVEMBER 11, 2010: The kids took green drink and a smoothie and an apple.

NOVEMBER 12, 2010: SEE PICTURE FROM OCT. 29. The kids took almond pate and kale salad. We went to see the Christmas Spectacular at Radio City Music Hall with the Radio City Rockets, it was an amazing show! On the bus ride over my daughter and I ate Sweet Curry Kale and Almond Ginger Pate, we also packed some oranges, apples, bananas and water.

11th week, 118 days to go!

Don't worry it may seem they don't eat much for lunch but when they get home at 3 p.m. they devour everything in site, well it's not that bad. My kids are 12 and 13 1/2 and they are required to come home and help out in the kitchen and then we sit down and eat together.

NOVEMBER 15-17, 2010: The kids have green drink every morning and Dad a.k.a Brown, made them, he's been using lots of greens lately, so nice and healthy. The kids took fruit smoothies and fruit for these three days. I have explained this before but it is an amazing fact with the raw vegan diet. Our diet is fiber and water, we don't need to eat a lot. Everything we eat contains fiber, fiber fills you up, it absorbs toxins and helps your body flush them out. Also, when in school my kids are bombarded with information and different energies. My son will often request to have nothing for lunch and fast, just so that he can focus on school. I operate better on an empty stomach also. Of course as a mom, I try to encourage him to take something, I usually win.

NOVEMBER 18, 2010: My daughter Daisy made the Raw Dawgs, sunflower seeds and some delicious seasonings, my son Diesel loved them. The kids took a big Raw Dawg and a salad with a smoothie and of course green drink for breakfast.

NOVEMBER 19, 2010: Friday, yes sir! The kids took a trail mix with dried cranberries, cashews and almonds, fresh fruit and a smoothie!

So, if you don't know I just put three weeks of lunches in, luckily one week only had 2 days, I fell behind alittle sorry for the delay. I have been extremely busy. I will not stop this challenge. It can be done, my kids eat the healthiest out of hundreds of students, they are making all A's, B's, I think one C and an F ( in Physical Science, Mr. Diesel) nothing we can not bring up to an A. I'm proud of my kids, they are taking on a lot and doing a great, fantastic, marvelous and extremely courageous job!!l

Tuesday, November 23, 2010: The kids had a Spicy Thai Cabbage, but they brought it back home. They love to show gratitude that way? :} They also enjoyed their fruit smoothie.

Can you tell I like color? Delicious Garden Salad, Sweet Potato Souffle, Creamy Lacinato Kale w/ Raisins, Cranberry Relish, and Kale Noodle Mac n' Cheese. The next picuture includes the Gogi Berry Pie that is out of this world delicious.

This week the kids took smoothies and fruit for lunch. Colder temperatures and for some reason my children are eating less. The come home with hefty appetites. Her are some pictures of what they eat when they get home. I told them they are destroying my Raw Lunch Challenge. My kids would much rather talk to their friends during lunch instead of eating.

Raw Bread is a treat in my house, this was a new recipe that had a ton of ingredients but was so worth the time. So, when I make raw bread, we enjoy delicious sandwiches for the week until we eat all of the bread. The sandwich taste like "Subway", my daughters description. We compare the delicious taste of raw food to the foods that we remember so well. We enjoy 100% healthy food that reminds us of the food we used to enjoy, the food that made us sick and overweight. This was a huge sandwich with nut cheese, lettuce, tomato, avocado, and a raw pickle on the side! Delicious!

My kids are picky. So, I made the Chickun Nuggets with carrot pulp instead of chopped carrots and my son did not like them much. He also did not like the Brown Mustard and Honey Sauce. My daughter found them to be fantastic and she devoured them. But, she did not take them to school for lunch she ate them when she got home.

The kids are back in school. I may be the only parent who dreads the return to school. I love being with my children and watching them experience life. I also like to impart to them life lessons that will hopefully help them along the way. Kids are sponges and if you spill lots of knowledge they will soak it up!

Well, what's new? They still don't want to really take lunch. So, I will continue to make it and whether they eat it for lunch or right after school you will know about it.

JANUARY 3, 2011: First day back to school, my kids took a smoothie for lunch. My son took and orange and a banana, but left it in the car.

JANUARY 4, 2011: Second day back to school, my daughter took a smoothie.

JANUARY 5, 2011: Daisy did not take her lunch, she enjoyed hers when she returned home. Diesel, my son enjoyed his totally, he does not appreciate red bell peppers, so he did not have any. He said, "Mom, I licked the container at school"! Guess he liked it! Did I tell you at home my kids regularly lick their plates, what can I say it's all in the freshness and flavor of pure natural food!

JANUARY 6, 2011: Diesel, my son took his lunch to school because I made him but he did not eat it until he returned home. My daughter left hers and ate it when she returned home as well after attending homework club. Again, although the kids may be hunger when they get home, they are able to focus better and actually have more energy eating lighter during the day. My son is in the kitchen now making Sunflower Seed Pate, one of his favorites.
